WORKBOOK ASSIGNMENT

 

During the days of service in which your management team will be assigned to be the dining room guests you will have approximately 2.5 hours outside of the labs to work on a restaurant operations workbook. The details of the workbook will be posted on BlackBoard and on the course website prior to your arrival in Las Vegas. Individual instructors will share with your class the specific requirements for the project which may include but are not limited to; marketing activities, video assignments, leadership development activities, product costing, menu development, service techniques research and restaurant evaluations.

 

It will be important that you use your time wisely during your guest diner days because each assignment is individual and due at the end of the course.
