During the days of service in which your management team will be assigned to be the dining room guests you will have approximately 2.5 hours outside of the labs to work on a restaurant operations workbook. It will be important that you use your time wisely during your guest diner days because each assignment is individual and due at the end of the course.
All ingredients must be ordered on the standard requisition form with the correct unit of measure, item cost, and total cost using the standard units and prices from the product order guide provided.
